We’re firm believers that ‘wine and meat’ is the new, cooler ‘wine and cheese.’  In our eyes Southbrook Vineyards was the ‘perfect pairing’ for us.  Sharing many of the same values as we do, all Southbrook wines come from a certified organic Ontario vineyard that is also certified in biodynamics.  All grapes are produced with respect to the soil, plants and animals living at Southbrook Vineyards estate.  This in turn transforms into a great tasting, guilt free organic wine.  Whether you’re sipping a chilled white wine while enjoying your Oceanwise certified salmon or a bold red alongside your AAA Canadian Angus striploin,  Southbrook Vineyards has a perfect pairing option for your Frozen Butcher protein of choice.   



  Southbrook Estate Grown Small Lot Cabernet Franc 101

Varietal: 85% Cabernet Franc, 15% Cabernet Sauvignon
Region: VQA Four Mile Creek
Year: 2013
Alcohol: 13%

Paired with
: Frozen Butcher steaks, lean & extra lean ground beef, ground chicken as well as the Beretta Lasagna

Tasting Notes: Medium ruby in colour, opening with aromas of red currant and fresh cherry, kirsch, delicate floral notes, fresh tobacco, woodsmoke and wet clay. On the palate, bright, juicy red fruits lead to wave of extract, fine tannins and toast to a long finish replaying, smoky, earthy red fruits. Pairs perfectly with any Frozen Butcher steak, grilled rare. Cellar 3-8 years for more complexity. 

Looking for a more ‘hearty’ fill? We also recommend sipping it alongside your pasta topped with a rich meat based sauce.  


  Southbrook Winery Triomphe Cabernet Merlot

Varietal: 69% Cabernet Franc, 31% Merlot
Region: VQA Peninsula
Year: 2014
Alcohol: 12.5%

Paired best with: The Frozen Butcher steaks, Beretta Chili, chicken thighs, bone in breast, chicken legs,  boneless breasts,

Tasting Notes: Medium-dark red with youthful purple glints. Expressive, fresh fruit aromas - cherry, red currant - with coffee, cocoa and damp earth foundation. Medium plus body, with the richness of Merlot rounding out the angular structure of the Cabernet Franc, and chocolate/cherry replays on the palate. Silky tannins and youthful acidity provide mouthwatering structure, leading to a medium plus length. 

Enjoy it alongside your favourite cut of Frozen Butcher grilled beef, Beretta chili or chicken cacciatore.   



  Southbrook Vineyards Triomphe Cabernet Franc

Varietal: 95% Cabernet Franc, 5% Merlot
Region: VQA Niagara Peninsula
Year: 2015
Alcohol: 12.6%

Paired best with: The Frozen Butcher stew beef, burgers & ground beef

Tasting Notes: The wine presents a nose of red currant with notes of raspberry, savoury herbs and cedar wood. The palate echoes the fruit aromas supported by medium toast and firm tannins. The finish is of medium length and is driven by both fruit and savoury notes. 

During BBQ season, this wine will be your Beretta beef burgers new best friend.  It also pairs well alongside any tomato based stews or curries, and bean and lentil salads.



  Southbrook Winery Triomphe Riesling

Varietal: 100% Riesling
Region: VQA Niagara Peninsula
Year: 2015Alcohol: 11%

Paired best with: The Frozen Butcher Halibut 

Tasting Notes: Pale gold, with heady aromas of clover, orchard blossom, lime, green apple, white peach and sweet herbs. Enters with ripe apple and peach flavours, balanced by bright acidity and mineral texture, with replays of floral and herbal notes, and a long finish supported by fruit, lime rind and fresh bay leaf. 

This wine will shine when paired with fresh goat cheese (an item no cheese platter is complete without!) or any Frozen Butcher Oceanwise seafood selection prepared in a rich cream sauce.   



Southbrook Winery Triomphe Chardonnay

Varietal: 100% Chardonnay
Region: VQA Niagara Peninsula
Year: 2014
Alcohol: 13%

Tasting Notes: Light gold, with youthful nose of orchard fruit, wet stone and smoky / toasty character. Fresh acidity on entry, with creamy pear purée flavour and texture. Medium plus length driven by fruit, mineral, tangy acidity and leesy notes.

Serve alongside bloomy-rind cheeses, roasted Frozen Butcher organic chicken or a cream based seafood dish.  




Southbrook Estate Grown Small Lot Wild Ferment Chardonnay

Varietal: 100% Chardonnay

Region: VQA Four Mile Creek
Year: 2013
Alcohol: 13.5% 

Tasting Notes: A worthy successor to the 2012 Minerality Chardonnay, the 2013 Wild Ferment has a rich core of creamy pear brulée with tangy, almost salty notes of fennel seed. The finish is bright and long, with the oak character well balanced by the fruit and mineral qualities of the wine. 

Pairs perfectly with Frozen Butcher Oceanwise salmon, prepared simply (such as poached, or salmon in a buttery sauce), Frozen Butcher organic chicken or mild curries with a buttery based sauce such as chicken makhani.
